Student Group of the Month

The Office of Sustainability likes to recognize student groups who are great examples of sustainability going above and beyond.  These are great opportunities around campus for students to get involved with.  


October 2015:

Cornercopia Student Organic Farm

Mission:

“Cornercopia is an organic farm that provides students hands-on whole farm learning opportunities, food for the local community and a place for community building, multi-disciplinary education, research and outreach.”


About the Farm:

Founded in 2004 the student group set out to become organic certified and achieved certification in just three years (minimum for certification).  In the beginning the farm was a directed studies class and now has its own course number.  With over 20 types of fruits and any vegetable you can think of, all grown organically, it's amazing this group doesn't get more attention!  The students make all of the decisions on what they would like to grow, and then practice management skills in promotion and selling of the produce.


Get Involved:

  • Volunteer on the Farm
The students who work on the farm are always looking for more help, and a great way to know if this is something to invest a lot of time into is to volunteer for an afternoon.
  • Take the Course
HORT 2031 is offered in the fall and is all about organic food and how to grow it.  In the spring MISA teams up and offers HORT 3021 and ARGO 5131 which is Student Farm Marketing and Planning. Classes are offered to all students, and multidisciplinary students are encouraged to register.  All classes listed get hands on work in the student farm.
  • Summer Research or Intern
Every summer Cornercopia hires 5 to 9 student employees to work on the garden.  Extra motivated students pursue UROP research grants to study in the farm as well.
  • Buy the Produce
The best way to get involved for everybody on campus is to go out and buy their food.  Their organic produce is healthy and sustainable.  Cornercopia has been at the Farmer's Market on campus, in St. Paul at Andrew Boss Meat Lab, and frequently sells produce to University Dining Services.
